Paul’s passion has kept him busy as a speaker and guest chef both locally and internationally. Events like Cook it Raw, Terroir Symposium, and the Cayman Cookout fill his spare time. He has also served as a judge for The World’s 50 Best Restaurants for the past five years.
His freestyle approach, unexpected ingredients, and culinary techniques grounded in his international experiences are all part of every dish Chef Paul creates. His recipes include quality, and often simple ingredients, focusing on the delivery of an exceptional culinary experience.

Chef Paul’s Knife Roll is expertly crafted by the artisans at JRE Industries. They have been producing all of our leather sheaths since 2013. This Knife Roll features genuine leather with a live edge so that each roll is unique. The soft suede inside carefully cradles the knives during transport. The custom Kydex inserts are are carefully molded to each knife and are completely removable for easy cleaning. The removable strop will keep that amazing edge tuned with the impregnated compound. It features an adjustable and removable strap an well as a paracord laced handle for additional cordage.

Les Stroud’s SURVIVORMAN machete has undergone over two years of prototyping and testing to make sure it was worthy of wearing the SURVIVORMAN label and after all of that testing we have a tool that anyone would be proud to use! This 3/32″ 1075 high carbon steel professional grade tool is dual convex ground with a higher slicing convex near the handle that fades into a more robust chopping convex at the belly thru the tip. The high carbon steel is protected by our food safe two stage patina. The machete measures 19 1/4″ overall with a 12 7/8″ sharpened edge. The natural canvas micarta is both chemically and mechanically attached to the knife with marine grade epoxy and stainless screws and brass nuts. We included a forward lanyard hole for additional safety when chopping and the contoured handle fits comfortably in the hand. Les Stroud’s Wild Harvest Foraging Tool needed the perfect accessory to add to the functionality of this amazing tool so the leather wizards at JRE INdustries developed this blade cover to protect the blade while allowing the addition of a Swedish dangler for those that choose to add the tool to their belt. This 8oz vegetable tanned leather is the same leather we use in our knife sheaths . The double stitching and open grommets mean years of service can be expected. The added bungee loops will secure the Foraging Tool in the blade cover during the most vigorous activity. The optional Swedish Dangler is easily added to allow you to snap the loop around your belt without removing it.
